Homemade granola is cheaper, crunchier and far less sweet than most store-bought versions, and it makes the whole kitchen smell wonderful. Rolled oats, nuts and seeds are tossed with warm honey, a little oil and cinnamon, pressed into an even layer and baked low and slow until golden. Leave it alone while it cools and it sets into big, snackable clusters.

How to get big clusters

  • Press it down. Spread the granola in an even layer and press it firmly with a spatula before baking so the pieces stick together.
  • Don't stir. Rotate the pan halfway through instead of stirring, so the sheet stays intact.
  • Cool completely. Granola is soft when it comes out of the oven and crisps as it cools. Break it up only once it is at room temperature.

Make it your own

Once you have the basic ratio of oats to sweetener and fat, you can swap in almost anything: pecans or almonds, pumpkin or sunflower seeds, a pinch of cardamom or ginger. Add dried fruit only after baking so it stays soft and chewy.

FAQ

Is this granola gluten-free?

Oats are naturally gluten-free but are often processed alongside wheat. Use oats labeled certified gluten-free if you need to avoid gluten.

Why is my granola chewy?

It needs a little more time in the oven or more time to cool. Bake until it is deep golden at the edges and let it cool completely on the pan.

Ingredients

Conversions are rounded for convenience. For baking, use the original measurements where possible.

Instructions

  1. Heat the oven to 300°F (150°C) and line a large rimmed baking sheet with parchment paper.

  2. In a large bowl, combine the oats, nuts, pumpkin seeds, coconut, cinnamon and salt.

  3. Whisk the honey, oil and vanilla together in a small bowl. If using the egg white, whisk it in a separate bowl until frothy.

  4. Pour the honey mixture over the oats and stir until everything is evenly coated. Fold in the egg white, if using.

  5. Spread the granola on the baking sheet in an even layer about ½ inch (1 cm) thick and press it down firmly with a spatula.

  6. Bake for 30 to 35 minutes, rotating the pan halfway through but not stirring, until golden brown and fragrant.

  7. Let cool completely on the pan, about 30 minutes, then break into clusters and stir in the dried fruit.

Notes

  • The egg white is optional but acts like glue and gives the biggest, crunchiest clusters.

Tips

  • Watch the last 5 minutes closely; honey browns quickly once the granola is golden.

Substitutions

  • Vegan: use maple syrup and skip the egg white.
  • Nut-free: replace the nuts with extra seeds, such as sunflower seeds.
  • Less sweet: reduce the honey to ⅓ cup; the clusters will be slightly smaller.

Storage and reheating

  • Store in an airtight jar at room temperature for up to 3 weeks, or freeze for up to 3 months.
