A burrito bowl has everything you love about a burrito, minus the tortilla, and it is endlessly customizable. Chicken thighs are marinated briefly in lime juice, chili powder and cumin, seared until charred at the edges and sliced over fluffy cilantro lime rice. Add black beans, a sweet corn salsa, creamy avocado and sour cream, and everyone can build their own bowl.

Why this recipe works

  • Chicken thighs. Thighs stay juicy over high heat and have more flavor than breasts. A 15-minute marinade is all they need.
  • Rinsed rice. Rinsing the rice before cooking removes excess starch, so the grains stay fluffy when you stir in the lime juice and cilantro.
  • Quick corn salsa. Charring the corn in the hot pan after the chicken adds a smoky sweetness in 3 minutes.

Build a better bowl

Start with rice, then add beans, sliced chicken, corn salsa and avocado in sections around the bowl. Finish with a spoonful of sour cream, salsa and a squeeze of lime. For a creamier topping, use a scoop of homemade guacamole instead of sliced avocado.

Meal prep burrito bowls

Divide the rice, beans, chicken and corn salsa among 4 containers and refrigerate for up to 4 days. Add the avocado, sour cream and lettuce just before eating. Reheat the rice and chicken in the microwave until piping hot.

FAQ

Can I use chicken breast?

Yes. Pound breasts to an even ¾-inch (2 cm) thickness and cook for 5 to 6 minutes per side, until they reach 165°F.

How can I make it vegetarian?

Skip the chicken and double the beans, or use the same marinade on thick slices of portobello mushroom or cubes of firm tofu.

Instructions

Marinate the chicken

  1. Mix 1 tablespoon of the oil with the lime juice, chili powder, cumin, garlic powder, paprika and salt. Toss with the chicken and leave for 15 minutes, or refrigerate for up to 8 hours.

Cook the rice

  1. Bring the rice, water and salt to a boil in a saucepan. Cover, reduce the heat to low and cook for 15 minutes. Remove from the heat and leave covered for 5 minutes.

  2. Fluff with a fork and fold in the lime juice and cilantro.

Cook the chicken and corn

  1. Heat the remaining oil in a large skillet or grill pan over medium-high heat. Cook the chicken for 5 to 6 minutes per side, until charred in places and cooked through to 165°F (74°C). Rest for 5 minutes, then slice.

  2. Add the corn to the hot pan and cook for 3 minutes, without stirring too often, until lightly charred. Toss with the red onion, jalapeño, lime juice and a pinch of salt.

Assemble

  1. Divide the rice among 4 bowls. Top with lettuce, black beans, chicken, corn salsa and avocado.

  2. Add sour cream and salsa and serve with lime wedges.

Notes

  • Warm the beans with a pinch of cumin and salt for extra flavor.

Tips

  • Let the chicken sit undisturbed in the hot pan so it develops a good char before you turn it.

Substitutions

  • Rice: brown rice, cauliflower rice or quinoa.
  • Dairy-free: skip the sour cream or use a cashew-based alternative.
  • Steak: use the marinade on flank steak and slice it thinly against the grain.

Storage and reheating

  • Refrigerate components separately for up to 4 days. Freeze the cooked chicken and rice for up to 2 months.
